Curried Chicken Salad (Makes 2-4 servings)
This makes a unique and yummy sandwich.
Ingredients: 1/4 cup plain soy yogurt 1/4 teaspoon curry powder 1/8 teaspoon ground ginger 1/8 teaspoon salt 8 teaspoons low-fat or fat-free mayonnaise 6 ounces cooked chicken, cubed 1/2 teaspoon onion powder (can also use 2 Tbsp minced onion if you tolerate raw onions) 1 Tablespoon raisins 1/4 cup canned crushed pineapple (unsweetened), drained
1. In a medium bowl, combine soy yogurt, curry powder, ginger, salt, and mayonnaise. 2. Add chicken and remaining ingredients. 3. Mix well. 4. Chill for several hours to blend flavors.

Oh yum, that sounds good! I think I'll try it this weekend! I can't get soy yogurt, but I'm going to play around with the basic recipe and just mayo and hopefully come up with something good.
