Chocolate Cake for One

I don't think I've posted this before... well, hopefully I haven't. This is a great thing to have on hand for those sudden chocolate cravings - or if you find that standard dessert recipes just make way more than you can eat before the rest goes moldy.

To make the mix:

1 box chocolate cake mix (Duncan Hines is safe)
1 box chocolate instant pudding mix (check the ingredients - Jello brand is safe)

Combine the 2 mixes well and store in an airtight container with the following instructions...

WHEN YOU WANT CAKE:

Spray a LARGE mug with cooking spray. Lightly beat together 1 egg white (see note) and 2 tbsp water in the mug. Add 1/2 cup of the mix and stir well. Microwave on HIGH 2 to 2 1/2 minutes.

Top as desired - I like a spoonful of cherry or raspberry all-fruit jam and a dollop of lite cool whip, but Hershey's Lite chocolate syrup (dairy-free!) or a simple icing of confectioners' sugar and a little soy milk work too - and eat warm! (And yes, it's good plain too!)

I have no idea what the fat content of this is, but I've been eating it safely for years, and I'm really sensitive to fats, so it can't be *too* bad!

NOTE: Do NOT use anything larger than a LARGE egg white. If you typically buy extra-larges or jumbos, you'll be using too much egg white!

You can also substitute 1-2 tbsp Egg Beaters... adjust the water accordingly so you end up with 4 tbsp of "liquid" total. (Thanks for the tip, jen!)

I haven't tried anything but chocolate, but with all the flavors of cake mix and instant pudding out there, you could come up with all kinds of flavor combinations. Just check the pudding mix, to make sure it's dairy-free and doesn't contain any other trigger foods.

It's not fair that this is so easy! I see an extra 15 pounds in my future

I used Duncan Hines Dark Chocolate Fudge cake mix and Jello vanilla pudding (I didn't have chocolate). It was still very chocolatey so I bet it would be even better with the chocolate pudding mix.

My one quibble is that I could really taste the egg white. Not sure why. Maybe I need the extra chocolate of the pudding mix to kill the taste? It was still good, but I think next time I'll try cutting the egg white in half and see if it'll still turn out.

I used to do this when I was a kid, except with lemon mix and raspberry all fruit jam, or black cherry or rhubarb jam/preserves. It's like a souffle. I think more than half the mug was jam, topped with more jam.

I *never* use larger than a LARGE egg... so if you're using extra-large or jumbo, that might have something to do with it.

after a long night at work hehe.

I used devils food cake and pudding bc for some reason there wasn't any plain old chocolate (maybe devils food is chocolate who knows?!? i'm not generally a chocolate fan)

anyways.. it was good and made a fair amount of cake! someone let me know if they try it with vanilla or another flavor because I think i'd like that even better!

I just tried this with the Duncan Hines Lemon Supreme Cake Mix and a box of instant vanilla pudding. Yum! I mixed 1/2 cup of the mixture w/ the 2 T water and 2 T egg substitute as directed. I didn't have a good mug, so I used a cereal bowl instead. No toppings or frosting, but the cake came out spongey and delicious! A+! Thanks again for this great idea, Casey!

So as I posted earlier ... the first time it was too "eggy", so I used 1 T EggBeater and 1 T water the next time, and it turned out great.

Well, today I made Better Than Hershey's Syrup and didn't really like it as a topping -- it wasn't that sweet and kinda runny. So I thought, great, how am I gonna use up half a bottle of liquidy dark chocolate stuff?

Well, I had an inspiration, and instead of 3 T water and 1 T EggBeater, I used 1 T EggBeater, 2 T water, and 1 T of Better Than Hershey's Syrup. My original cake mix was DH Dark Chocolate Fudge and Jello instant plain vanilla.

It came out SO GOOD this way. It was the best cake I've ever had on this diet. It was yummy and moist and very chocolate-y.

In fact, it was so good that I made it two more times this way today. So now I kind of feel like I'm going to throw up from all this sugar and chocolate roiling around in my stomach, but the PMS monster is feeling super serene right now.

I've been topping mine with the Hershey's Lite syrup, which is dairy-free, but like you described with that recipe, it's liquidy and kind of bitter. I bet it would work a LOT better in the cake instead of on it. You're a genius!

Questions on the choc. cake for one: When you say LARGE mug do you mean a coffee mug? Mine hold just a tad over 1 cup of liquid. Someone wrote half of a serving you could use a regular size mug, so I'm confused. Also I only saw Devils Food and dark chocolate Duncan HInes, do they make a plain chocolate and what did you use? I *assume* you used just the regular size pudding mix? Thanks for any help, I'm eager to try this out. Barb in Florida

For the mug, you definitely want a LARGE mug, not a regular coffee cup type mug. It rises quite a bit as it bakes. If you don't have a large mug, a bowl will work just as well!

I think for the cake mix I normally use Devil's Food, and I use Jello brand instant chocolate pudding, just the regular 4-serving size box.

how did you get it to turn out w/ no egg??? I tried the exact same thing (minus peppermint), only adding water & syrup, and it was horrible.

Oh, and I just recently tried using meringue powder -- mixed it w/ dry ingredients and then added water -- and it turned out fine.

Casey, do you think it would be possible to do this with applesauce instead of egg? I'm vegan, so the egg is out of the question, and I'm out of powdered replacer.

I was thinking maybe some applesauce and some extra water, but I'm not sure...

I can't get this to work without a real egg white, Eggbeaters, or meringue powder. It turns out flat and sticky and tastes like indigestion.

I've tried --

what Casey just suggested w/ baking powder/water
water and chocolate syrup
water and applesauce
water

I know this sound silly, but I hate using the egg white -- it's such a bother to crack it and then go scrub my hands. Plus unless I'm doing double chocolate with extra syrup, I can never quite get rid of that "eggy" taste. I never buy Eggbeaters because they're expensive and I rarely use them up within 7 days, making them even more expensive, and meringue powder is way too expensive. I glanced at the powdered egg replacer stuff but it was also really expensive.

Any other ideas?

I don't get an eggy taste. I mean, I usually DO do double chocolate (chocolate cake, chocolate pudding) with extra syrup on top, but even with the other flavors I've tried, I've never tasted the egg. Huh.

I also don't know why the egg substitutes you've mentioned haven't worked for you, when they've worked for other people. Hmm. I have to admit that I don't know enough about microwave baking to make any other suggestions - hopefully someone else can weigh in on this one!

I wonder if it's my microwave. Like, for instance, mine is fully cooked in one minute and fifteen seconds, a full MINUTE before anyone else. I did try reducing the power so that it took 2:20 to cook, but even then it didn't turn out.

I don't know. Do you buy organic eggs? Maybe they're eggier-tasting? Actually, if you buy organic eggs, that could totally be the case - we recently got some organic eggs from a friend who raises her own chickens, and couldn't believe how different they taste from supermarket eggs. I'd stick with the supermarket kind for baking, in general.

This is going to be a really stupid question, but maybe not, because I've grabbed the wrong kind of pudding off the shelf more than once... are you sure you're using instant pudding?

It might be your microwave, but maybe not. Mine is actually fully cooked in a little over a minute, too, and it's always been fine. I know that a low-powered microwave could be a problem, but I don't think that's what you have going on here.

I'll keep thinking. Somewhere, I have an old microwave-cooking cookbook; that might shed some light on the topic, if I can find it.

Casey, I finally made this!

The first time, it was a little over-microed, but the second time, I didn't oil the cup and I put it in for just over a minute and it was DELICIOUS!

I kept burning my mouth because it was so good!

I use 1 1/2 TBSP of applesauce and 2 1/2 of water, and it's just fine. I love it!

I haven't tried this recipe yet (afraid of addiction!) but I thought I'd put my two cents in re: your egg conundrom. I've mentioned this product on the board so many times that people probably think I own stock in the company, but have you tried Eggology? www.eggology.com . It's 100% pure, pasteurized egg whites, available in organic and regular. They last in the fridge for MONTHS and they last in the freezer INDEFINITELY. I'm a huge fan. I find they have almost no taste, and because they are pasteurized, you can actually add them right into a smoothie without worrying about any diseases. Anyway, give them a try. You can order them online if your grocery doesn't carry them.

I've seen you post about them before and have specifically looked for them, but have never found them here. I don't buy anything online unless I absolutely have to. It's against my religion to pay for shipping. My egg white laziness isn't a good enough reason.

Yup, I'm using instant pudding! Duncan Hines cake, Jello instant pudding. I've tried several combos too.

I have been making this quite often lately to satisfy my chocolate cravings. Tonight I used applesauce instead of the egg white b/c I was out of eggs but was still craving chocolate ridiculously! It was surprisingly yummier! It was so much more moist and chocolately. I couldn't stop eating it right out of the microwave. I think i may have permanently burned my tongue. But it was sooo good. I definately would recommend trying the applesauce if you don't have eggs or are vegan. It just also tastes better...even if you do have eggs. Try it and see what you think....

Casey! Are all of the Duncan Hines cake mixes safe and I didn't think that the pudding mixes were safe don't they contain milk in the powder itself? Good recipe though!! Thanks

But do check the ingredients... some flavors might sneak it in. I know the chocolate fudge one is safe.

As for the cake mixes, I heard rumors that DH cake mixes now have dairy in them, but I'm not sure. To be totally honest, it's always a dairy derivative - not straight-up milk - and in with all the soluble fiber from the flour, it never bothers me, and I'm SUPER-sensitive to dairy. So I'd say give it a try anyway, but I'm daring like that. If you'd rather not risk it, read the ingredients on other cake mix brands and see if you can find others that are dairy-free.

Puddings are usually thickened with cornstarch, I believe. At any rate, some flavors of Jello brand instant pudding are listed on PETA's "accidentally vegan" page:

You'll be safe with those. But if you want to find alternatives, I'd suggest the health food store.

I've been using the store-brand organic cake. It does taste a little different (it doesn't have as much sugar, and there's actually less than the DH box), but I love it just the same.

My very thoughtful friend Jen made me a cake using organic cake mix not too long ago, and I agree, it was quite good. It's certainly a nice alternative when you want less sugar and preservatives!

I'm sad that it didn't work out for you. When I tried it, it was amazing!!! I use 1 1/2 TBSP of applesauce and 2 1/2 of water, DON'T spray the cup or bowl with oil either! And also only microwave for about a minute...maybe a minute 15. Let me know if this works for you

I'm dying to try this with a GF cake mix to see if it will work for we gluten free folks.
I understand the GF mixes make very small cakes so I have a feeling I'll have to buy a few of them and make adjustments along the way.

I bounced this off a couple really good Celiac cooks and no one had a clue about this using a GF mix or had ever tried such a thing.

I'll let you know the results as soon as I can. Unfortunately I don't have a dog to give the goofs too, but hey, a little Rice Dream ice cream thrown on top of a goof ought to make it edible, don't you think?

I was going to make this last weekend, and checked the DH box and it said "contains milk ingredients" so I didn't get it. Then I went to Wal-Mart and bought their brand which didn't say it had milk in it. But after I got it home, I noticed that under the "shortening" part - it said it could contain beef fat, or lard - which I'm thinking could be worse than the "dairy derivative" - what do you think??

I just came across a cake mix with beef fat this past weekend and was totally grossed out! That just seems so unnecessary. As for how bad it is for us, it's such a tiny amount it would probably be okay... but I just couldn't get myself to buy the stuff. Honestly, most of us here seem to be okay with the cake mixes that contain 2% or less of milk products, although please try it only if you're stable. Oteherwise they do sell organic cake mixes that are totally dairy-free, as I remember someone mentioned farther up on this thread.

I finally tried this last night and it was so good and so easy. A bit deceiving - you think you're doing good by only making one serving at a time, but it's SO freakin easy to make another, it's still dangerous. LOL But delicious!!!

I used to eat this all the time -- in fact, I still have like four cake mixes and six pudding mixes in my cupboard. But the last time I made it, I ate about half and then noticed that it was starting to taste unpleasant. There was something crunchy in the next bite -- and I dug around found that somehow I had baked a ladybug into it!

I haven't been able to eat this ever since then. I'm still not sure if I'm sorry or not.

I used the Kinnikinnick chocolate cake mix and a small pkg of chocolate Jello pudding mix. I'm going to try it with other brands of GF cake mixes too..and maybe other flavors. Anyone tried a vanilla one? The only difference is that you need ONE more tablespoon of water, since the GF mix flours are so dense. Other than that, it is essentially the same, as I'm sure, the non-GF version is.
Now, if I could just stop wanting one every night...they're addictive!!! I even went out and bought some more white Corningware 22 oz. mugs (the ones that have vented covers) for when I have unexpected company. If I don't have a desert I may just make these for each guest....or have them make their own...........how easy is that?

I used a "normal" size mug. I'm not sure about actual ounces. That's the best I can describe it - not tiny teacup size, but not mammoth size either.

... is to use EggBeaters (just the one T + water). But, I seldom buy EggBeaters because they're so much more expensive than whole eggs, so I generally just use one egg white. I do find that you have to stir the heck out of the batter if you're using egg whites, otherwise it will taste "eggy".

Be careful, though, this is super-addicting!!!

you could just take the calorie count for one serving off the box for the cake and the box for the pudding and add together. Should be pretty close.
