Made it again tonight... this time I used 2Tbsp water, 1-3/4 Tbsp Lite Hershey Syrup, and 1/4 Tbsp Peppermint Extract....NO EGG..., cooked for 2 mins & 20 seconds yummy!!

casey, this cake is amazing! i haven't even needed to venture into fillings and toppings... just the cake is so good!! and there's something so fun about a little personal cake in a bowl. a total addiction. thank you!

not to be a buzzkill... i guestimated about 300 calories... i know it'll vary with different mixes, but does that sound about right?

I cut out the nutritonal info off the cake & pudding boxes and set them aside to figure it out, but have not done that yet. I will let you know when I do.

how did you get it to turn out w/ no egg??? I tried the exact same thing (minus peppermint), only adding water & syrup, and it was horrible.

Oh, and I just recently tried using meringue powder -- mixed it w/ dry ingredients and then added water -- and it turned out fine.

It turned out great.... do you eat it when it is still hot/warm? I do... and I use an 18oz jumbo coffee mug like this one...

Casey, do you think it would be possible to do this with applesauce instead of egg? I'm vegan, so the egg is out of the question, and I'm out of powdered replacer.

I was thinking maybe some applesauce and some extra water, but I'm not sure...

You can try the applesauce, if you want, but I would probably try an extra tbsp of water and a tsp of baking powder, if you have that around.
