I found this recipe at recipe zaar.
Orange Roughy with Dill Sauce #42176
recipe by Gwenn

I got this recipe from a community cookbook. It was so easy to prepare and very delicious. It is also healthy and low fat. A great weeknight dish.
4 servings
30 minutes 10 mins prep
5-7 orange roughy fillets
1/2 cup low-fat mayonnaise such as Hellman's with 2 grams of fat per serving
4 teaspoons lemon juice
2 teaspoons Dijon mustard
2-3 tablespoons fresh dill, chopped
2 tablespoons grated parmesan cheese I just put on DH's fish. Mine was great without it.

Place fish fillets in a baking dish sprayed with Pam.
In a bowl, mix mayo, lemon and mustard.
Add in dill and stir well.
Spread all of the sauce over the fillets.
Then sprinkle with the Parmesan.
Bake at 375 for 20 minutes (or until fish is done), then broil for 5 minutes to get top crispy and brown.

Hey Min-

Do you think plain soy yogurt would work instead of mayo? I love dill, but I hate mayo!! I'd also have to get my hands on some soy fish... hmm....

I don't think soy yogurt would work in this recipe. The mayo makes a goopy sauce like a hollandaise. DH didn't ask what it was but I can guarantee he wouldn't have wanted to eat it had I said it was mayo (he can be a food snob about poor people food- that is what he thinks it is). He liked it a lot and he usually doesn't like plain, baked things like that. I would give it a try.
