So I've decided to experiment with my grains now that summer is here, and there are lots of potlucks and bbq's to attend...and this past weekend I tried the following dish, and man oh man was it good...and it was a total hit at the party too! All the ingredients were very fresh and summery! I definitely want to try more dishes with barley now. This makes enough for like 16-20 people, so you may want to half or quarter the recipe.

Barley Salad

4 cups cooked barley (use package directions...
basically just boil it in salted water until it's done), drained, rinsed & cooled
1 cup crumbled feta cheese (optional, use soy)
3 or 4 firm ripe tomatoes, chopped (I used multi-colored cherry tomatoes - so pretty and festive!!)
4-5 green onions, sliced
Fresh basil, torn into pieces - as much as you like (I use about 3/4 cup loosely packed)
Chopped garlic - again, to taste. We love it so I do about 3 cloves.
3/4 cup Extra Virgin olive oil
1/4 cup balsamic vinegar
1/4 cup cider vinegar
salt and freshly ground pepper to taste

Combine the barley, feta, tomatoes, onions, basil & garlic, and set aside. Whisk together the oil, vinegars & seasonings. Pour over barley mixture and toss well. Allow to sit for at least an hour or as long as 6 hours before serving - it's fine the next day, too, but it will look a little tired.
