Vegan Blueberry Muffins

I found this last night while searching for some new recipes for my grandma and I. I baked these this afternoon, but won't try one until tomorrow morning.

1 1/2 cups flour
1/2 cup cornmeal
1 Tbsp baking powder
1/4 tsp salt
1 egg substitute
1 cup soy milk
1/3 cup maple syrup
1 cup blueberries

Mix ingredients and bake at 350F for 20-25 minutes in oiled muffin tins.

I used 2 egg whites. I am a vegetarian that likes to follow some of the vegan guidelines, but am not strict. I am sure you could use the fake egg powder if you are vegan.

I also added cinnamon to the batter.

I thought that they were okay, but need a bit more flavor. I did sprinkle a brown sugar/cinnamon mixture on the tops of 3 of them, so the next time I eat one I will try one of those and get back to you.

In gluten free recipes, they use grated/dried orange peel to help add flavor back. I bet some vanilla would be great in these also.
