Spinach & Pine Nuts on Couscous

This is from what used to be The Med Diet website by Kevin Vigilante, M.D., M.P.H. and Mary Flynn, Ph.D. authors of "Low-Fat Lies: High-Fat Frauds and the healthiest diet in the world".

I haven't made this in awhile, and I think it needs some adjusting. Any advice/suggestions would be welcome.

Spinach & Pine Nuts on Couscous

2 tsp olive oil - this could probably be elimated & use cooking spray or maybe just use 1 tsp
1 clove garlic, minced
1/3 cup chopped spinach
2 Tbsp pinoli (pine nuts) - I'd probably just use 1 T
1 cup cooked couscous

Heat oil in frying pan over low/med heat. Add garlic. Cook 3-4 minutes. Add spinach. Stir. Add pinoli. Stir. Heat through. Serve over couscous.

Thanks so much for three great new recipes!

I was just staring at a box of couscous last night and thinking about how I would like a new recipe to use for it!

I might have a go at it this week.
