Honey peanut bar cookies

I got this recipe from my most recent copy of "Cooking for 2". I thought it looked IBS safe so I gave it a try and loved it. Even my fiance loved them and couldn't stop eating them.

1/2 cup sugar
1/2 cup honey
1/2 cup red fat peanut butter
3 cups Cheerios
1/2 cup peanuts (optional or you can easily substitute raisins or something which would also cut back on the calories and fat)

1. In a small saucepan, combine sugar and honey. Cook and stir over medium heat until sugar is dissolved.
2. Turn off heat and add peanut butter. Peanut butter should "melt".
3. Add cheerios and peanuts and stir to coat.
4. Spread into an 8 x 8 pan coated with cooking spray.

Servings: 15
Nutritional Analysis:
Calories: 143
Fat: 5.24 g
Sat fat: .84 g
Cholesterol: 0 mg
Sodium: 123 mg
Potassium: 120 mg
Carbs: 23 g
Protein: 3.4 g

What do you guys think? Should it be IBS friendly? I didn't have any problems after eating them.

If you want to get really technical, it's still a little high in fat for IBS diet guidelines - my math is a little sketchy, but I think it came out to about 32% calories from fat. However, that's still not TOO bad as long as a person doesn't go crazy and eats a low-fat diet over all. I think they sound pretty tasty!

it might be ok. For some reason I am thinking pretzel sticks. I have had a craving for covered pretzels lately. I don't know what peanut butter covered pretzels and cheerios would taste like, but there is only one way to find out.

Mmm...I'll have to give this a try. Cheerios and peanut butter--two of my favorite foods! Personally, I'd leave out the peanuts and/or raisins, but the pretzel substitution sounds good. I'm tempted to add in chocolate, but I don't know how I could do that safely. Dairy-free chocolate chips? Mix PB w/ cocoa?

You could mix in Cocoa pebbles cereal.

***sigh** between the Junior Mint Brownies and these I definately need to find an exercise class! LOL I didn't realize that Cocoa Krispies were safe! YEAH!!!

I know it! But in my opinion, a little extra workout is worth it. When I learned that I had IBS the hardest thing for me to give up was desserts. I can't tolerate most soy products either so I am constantly on the lookout for desserts of this type.
