These MUSHROOM SLOPPY JOES prove that you don't have to use meat for a good flavor. In a large nonstick skillet, heat 1 teaspoon vegetable oil over medium. Add 1 pound chopped fresh white mushrooms; cook and stir 8 minutes or until browned and liquid has evaporated. Stir in 1 (15 1/2-ounce) can sloppy Joe sauce (Del Monte brand does NOT contain high-fructose corn syrup). Cook mixture 3 minutes or until thick. Divide and spoon mushroom mixture on bottom of each of 4 split and toasted hamburger buns; add top. Serve immediately with canned VEGETARIAN BAKED BEANS. Add a MIXED GREEN SALAD (if you can tolerate it; we ate canned green beans instead, since I can't tolerate salad). (We also had some canned fruit to round out the meal.)

Those sound pretty tasty. I'll have to try them. My tastebuds have only recently started liking mushrooms, and I'm so happy because it has opened doors to new recipes.

Isn't strange how tastebuds change?
