Is There A Safe White Sauce?

I did do a search 1st to see if anyone had asked this before. Since I really never cooked much until now I don't even know how to make a homemade gravy or sauce if I wanted to. So.... what I'm wondering is if anyone has figured out a way to make a "white sauce"... I recall when I was young... Mom would make a white sauce....not too thick... from a package with dry powder...mixed it in the blender with milk I think? and then heated it up and added salad shrimp to it. She served it over white rice with just some salt & pepper. oh, and green beans..... yum....

Any ideas?

Search for alfredo sauce - the link was posted here and the recipe got raves! Mags adds shrimp and broccoli to it.

I did get that one.... this sauce was not as thick, creamy, rich and the alfredo. But thank you....I should have said that is my origianl post.

Ok... I found one... but it needs some converting. What can I use in place of the butter?

WHITE SAUCE:

3 tbsp. butter ??
3 tbsp. flour
1/4 tsp. salt
1/4 tsp. pepper
1/4 tsp. cayenne pepper (adjust to taste)
1 1/2 to 2 c. milk (depending on desired consistency) *I would use soy

Cook butter and flour until butter is melted. Cook about 2 minutes longer. Gradually add milk until preferred consistency. Add salt and peppers.

Hi - Try using 2 T of canola oil for the butter - or a nonhydrogenated soy margarine.

Rice Dream White Sauce new

Look what I found..... I can't wait to try this with salad shrimp over rice!!

Rice Dream White Sauce

2 Tbs. canola oil
1 cup Original Rice Dream
5 Tbs. unbleached flour
1/2 tsp. sea salt
1 cup water or vegetable stock
pinch white pepper

In a small saucepan, heat oil over medium heat. Add flour and gently stir for a few minutes. Bring water or stock to a boil and slowly pour into flour/oil mixture; whisk vigorously. Blend in Rice Dream, salt and pepper. Reduce flame to low or place a heat diffuser under the pan. Cover and simmer for 10-15 minutes. Adjust seasonings to taste. Sauce will thicken as it cools and is best served immediately.

Yield: 2 1/2 cups

Variations: For Indian cuisine; add 1 tsp. curry powder; for an Italian flair, add 1/4 tsp. each of powdered garlic, dried basil and oregano; as a cream sauce for fish, add 1 tsp. dried dill, 3 Tbs. lemon juice and 2 Tbs. capers.

I plan to make this in the next week or so, does anyone know what the real difference between sea salt and just regular table salt is? Do you think it will matter which one I use?
