Need protein - bean recipes, anyone?

I just realized I need to get more protein, especially since I am a vegetarian. Any safe recipes for beans or anything else anyone can recommend?

I really like Heather's Smokey Black Bean Dip, which you'll find in Eating for IBS. I just leave out the liquid smoke because I never have it around and I keep forgetting to look for it at the supermarket. Shell's Artichoke Hummus is another recipe that sounds good; I haven't tried it yet but it's on my list.

Tostadas are good! You can buy the corn tortillas already baked (or you can heat fresh ones until crispy), then spread mashed black beans or FF, vegetarian refried pinto beans and add some rice and salsa on top. I add a squirt of lemon or lime juice for some extra zip. The rice and beans together make a complete protein.

Quinoa is supposed to be a good source of protein, one that mixes well with other grains or soy products. I haven't tried it yet, but I recently bought a box of quinoa flakes which I hope to try this weekend.

These are so good and get better as they sit. It makes alot, so share!


1# TVP, Ground Chicken,or Ground Turkey
1 medium onion, chopped
¼ C. Brown Sugar
2 T. Mustard
2 T. Vinegar
½ C. BBQ Sauce (any flavor)
28oz. can Baked Beans
15 oz. can Kidney Beans-Drained
15 oz. can Butter Beans-Drained
15 oz. can Lima Beans-Drained
15 oz can Great Northern Beans-Drained
1 Pkg. soy or turkey hot dogs, sliced



Brown meat and onion in stock pot until cooked through. Drain. Add all other ingredients
and stir well. Simmer on low for 45 minutes, stirring often.

Can be put in a crock pot after meat/onion is cooked and left to simmer on low. Just check to make sure it doesn't stick to bottom.

Also, feel free to add whatever beans you like or have on hand. Black beans, garbanzos and pintos all substitute well!

Is great as a side dish or as a meal in itself with some dark bread. Makes about 9 cups.

Refried beans are low in fat and relatively tolerable. I eat them a lot.

if you can tolerate some juice (I can in this for some reason) and some tomato, this works well:

sautee onion, garlic in orange juice
add well cooked beans (canned and drained or cook yourself)- typically I use pintos or kidneys), some cilantro, some basil, and chili powder to taste... pinch of saltand a can of tomato paste, simmer for about 15-20 minutes

puree in a blender or mash with a potato masher.. serve with chips, tortillas, arrot sticks, anything... YUMMY!

I made the bean dip from Heather's book. Only had a potato masher, not a food processor, but it turned out good anyhow. Had it with some baked chips and flavored rice. Thanks guys!

As for a website about beans, I don't really know of one. Did you try searching for info about beans on google? I bet they'd have a ton.
