Wacky Cake and PB Icing.....

My mother brought home a chocolate cake with peanut butter icing for my 16 year old brother the other day... who likes to remind me that he is not on a "special diet" So I have decided to make an IBS safe chocolate cake with PB icing. But since I am still new at this I wanted to post the recipes first and make sure that it would actually be IBS safe, and get some opinions. So here they are....

WACKY CAKE
3 cups flour
2 cups sugar
6 tablespoons cocoa
1 teaspoon salt
2 teaspoons baking soda
2 teaspoons vanilla
2 teaspoons vinegar
2 cups water
2/3 cup oil

Mix together dry ingredients, then add vanilla, vinegar, water, and oil. Mix and put in a 9x11 inch pan (ungreased). Bake at 350 degrees for 35 minutes.

PEANUT BUTTER ICING
3 cups powdered sugar
1/3 cup peanut butter
1 1/2 teaspoons vanilla
1/4 to 1/3 cup milk

Mix powdered sugar and peanut butter. Stir in vanilla and milk. Beat until smooth and of spreading consistency. Frosts a 13x9 inch cake or fills and frosts two 8 -9 inch cake layers.

Also, peanut butter can be fattening, which can make it a trigger. I tolerate it quite well, but others do not.

I didn't think of cutting the oil and using applesauce, but I will try it like that. When doing this do you always use half oil and half applesauce to equal the original amount? I am confused by that. Also, I seem to be ok with peanut butter so I figured that I would be ok with this icing recipe. Thanks for the input!

You could always try reduced fat peanut butter - as it's the fat in peanut butter that is usually the trigger. Sounds pretty good!

I usually do 1/2 oil and 1/2 applesauce. Others may do differently.

this sounds so good!im going to the store to buy some of it!yummie!wait..well i guess you could buy choc cake mix and just make the frosting right?
