COCONUT MILK AS SUB FOR SOY MILK IN RECIPES?

Hi - I was wondering if light coconut milk can be substituted for regular or soy milk in recipes? I have some in my cupboard but I can't remember why I bought it!!!

Depends on how "light" it is. Coconut milk is usually super high in fat - check the ingredients and see if less than 20% or so of the calories come from fat. Also check what the serving size is they're using to give that figure. And make sure they haven't added any nasty chemicals in there as well.

Heather - thx for responding. Here's the scoop:

14 oz. can
Serving size 2 tbsp at 13 serv in can
Cal 20
total fat 2g
sat fat 2g
chol 0 solium <5mg
total carb <1 g
fiber 0
sugars <1 g
protein 0

So, the whole can is 260 cal, 26 g fat (wow!).

There's a comparison between light and reg coconut milk:
Lite cal 20 vs 55
lite fat 2 g vs 5 g
sat fat 2 g vs 4 g

Ingr are coconut milk and water. No preservatives and no artificial colors or flavors.

Ooohh, this is still almost 100% pure fat! 260 calories, and 234 of those calories are fat (26 grams, times 9 calories per fat gram). I'd be super careful with this stuff - maybe use just a tablespoon or two per recipe to give a bit of coconut flavor. I'd treat it like any other oil and not like soy or rice milk.
