Can we start a thread here for new Passover recipes? Just to make things a bit easier. Anything already posted doesn't need to be re-posted in full, but maybe a link would be nice.

I have a lot of recipes for pesach.. I'll post more later, and look- I posted many before... I know my merengue kiss mods are on here, as are some of the other things I make a lot during pesach... its not chicken soup with matza balls is one of them!

I'll do a search later or tomorrow on some and add others... but off the top of my head- my paella recipe from the other day is safe... the whipped topping recipe was in moms pre- pesach bulletin... I have a yummy safe date nut pudding recipe if I can find it (great dessert that though it calls for 2 tbs of flour works well with 2 tbs of potato starch instead!).. just realized I may have lost it to reformatting my PC... among other things.. hrm- will look tonight at home.

Here are some of my Passover baking recipes. new

I revamped them to make them IBS safe but Ihave no idea what they will be like. I plan to find out this year...

BROWNIES

4 egg whites
1 c. sugar
¼ c. cocoa
¼ c. oil
¼ c. apple sauce
½ c. cake meal
¼ c. non dairy chocolate chips
½ c. nuts

1. pre heat oven to 325 degrees
2. beat eggs well
3. add sugar a little at a time
4. add the rest of the ingredients
5. spray an 8 x 8 pan
6. pour in batter
7. bake at 325 fo 20 – 25 minutes


CHOCOLATE CAKE

8 egg whites
1 tsp. baking powder
1 tsp. vanilla
1/3 c. oil
1/3 c. apple sauce
2 c. sugar
2/3 c. cocoa
¾ c. potato starch
¼ c. cake meal

1. Preheat oven to 350
2. Mix ingredients in a bowl one at a time
3. spray an 8x8 pan
4. bake at 350 for 45 – 50 minutes

MERANGE COOKIES

2 egg whites
½ c. sugar
½ c. non diary chips

1. preheat oven to 350
2. beat egg whites till frothy
3. add sugar a few grains at a time
4. beat until stiff
5. add chips
6. drop by spoonful onto a greased cookie sheet
7. turn oven off
8. put cookies in oven for four hours
9. makes about 12

MUFFINS

1 c. potato starch
¾ c. cake meal
2 tsp. baking powder
4 tbsp. oil
¾ tsp. salt
4 egg whites
1/3 c. sugar
¾ c. water

1. Preheat oven to 400
2. combine dry ingredients
3. beat eggs in a separate bowl
4. add oil and water
5. combine both bowls
6. pour into 12 greased muffin tins
7. bake at 375 for 25 minutes

PAN CAKES

1 c. cake meal
2 egg whites
1 tbsp. sugar
1 c. water
1 tbsp. baking powder

1. pour eggs into a glass pitcher
2. add water and beat
3. add the rest of the ingredients
4. pour cakes onto a greased skillet over a medium flame
5. fry until cakes bubble
6. flip and fry other side until it rises slightly
7. makes 1 dozen

ROLLS

1 c. water
1/3 c. oil
1/3 c. apple sauce
2 c. matza meal
4 tsp. sugar
½ tsp. salt
8 egg whites

1. preheat oven to 375
2. put water and oil in a pot and bring to a boil
3. cool
4. add matza meal, sugar, salt and apple sauce
5. mix well
6. add eggs one at a time
7. let it stand for 15 minutes
8. wet hands and roll batter into tennis size balls
9. place on greased cookie sheet
10. bake at 375 fo about 40 minutes
11. makes about 1 dozen

These are also revamped so let's see what happens...

APPLE KUGAL

¼ c. oil
½ c. apple sauce
¾ c. sugar
¼ c. cake meal
½ c. potato starch
6 egg whites
2 apples peeled and diced

1. preheat oven to 350
2. mix batter ingredients (everything but the apples)
3. spray an 8x8 pan
4. pour half the batter over the bottom
5. put apples in pan
6. cover with the rest of the batter
7. bake at 350 for 1 hour


CARROT KUGAL

¾ c. potato starch
¼ c. cake meal
1 ½ tsp. salt
1 ½ tsp. baking soda
1 tsp. cinnamon
¼ tsp. ginger
½ c. oil
¼ c. apple sauce
½ c. brown sugar
2 egg whites
1 tbsp. water
4 grated carrots

1. preheat oven to 350
2. beat eggs lightly
3. mix in the rest of the ingredients
4. spray an 8x8 pan
5. pour in batter
6. bake at 350 for 1 hour

POTATO KUGAL

8 egg whites
6 tbsp. oil
1 tsp. salt
dash of pepper
5 large potatoes
1 small onion

1. preheat oven to 375
2. combine oil and spices and eggs
3. grate potatoes with onion together
4. add to mixture
5. spray two 8x8 pans
6. divide batter between the two pans
7. bake at 375 for 1 ½ hours


ZUCCHINI KUGAL

3 medium zucchinis (peeled)
6 egg whites
2 c. sugar
¾ c. cake meal
2 ¼ c. potato starch
1 ½ tsp. vanilla
1 tsp. baking soda
½ c. apple sauce
½ c. oil

1. preheat oven to 350
2. grate the zucchinis into a bowl
3. add the rest of the ingredients
4. grease two 8 inch loaf pans
5. divide batter evenly between them
6. bake at 350 for 1 hour

CHICKEN SOUP WITH MATZO BALLS

4 chicken breasts
3 carrots
2 stalks of celery
1 parsley rot
1 diced onion
salt and pepper to taste
3 tbsp. chicken boullion

1. skin and clean chicken and place into a soup pot
2. fill pot with water and bring to a boil
3. skim off fat
4. turn down flame and add vegetables and seasonings
5. bring to a boil again
6. turn down flame and allow to simmer for an hour
7. prepare the matzo ball batter

1 c. matzo meal
½ c. water
8 egg whites
1 tsp. salt
dash of pepper

8. beat eggs
9. add water. Salt and pepper
10. add matza meal
11. refrigerate for an hour
12. bring soup back to a boil
13. shape matza ball and drop into boiling soup
14. turn down flame and allow to cook for ½ hour

TZIMUS

2 cups carrots sliced and cooked
1 large sweet potato cooked and sliced
3 apples peeled and sliced
½ c. brown sugar
3 tbsp. oil
1 c. water
salt and pepper to taste

1. preheat oven to 350
2. arrange vegetables in a shallow baking pan
3. top with apple slices
4. in a pot mix together sugar and oil
5. pour over slices
6. cover with foil and bake at 350 for 30 minutes

What is cake meal? Is that matzah meal?

is a finer grind of matza meal- closer to the texture of flour, so not as grainy in some items... either buy some or put regular matza meal in the food processor breifly..

I am making your potato kugel right now! It's in the oven. I added some garlic powder to it...but otherwise I used the exact recipe. Thank you SOOOOO MUCH *hugs*

sounds yummy.. I'm making pulled chicken for tommorow and Bill is making lasagna for our company tonight- so a dairy dinner - they are vegetarians, and I get to have pasta with my sauce on it.. I have some I store for occasions like this...
