CRISPY CHICKEN WITH A LEMON TWIST

Two Servings

2/3 c. corn flake crumbs (any bread crumbs will work just fine here)
1 t. dry mustard
1/8 t. black pepper
1/4 t. paprika
1/2 t. garlic powder
1 T. grated lemon rind
1 egg white
2 t. fresh lemon juice
2 portions of boneless skinless chicken breast

Preheat oven to 350 degrees. In a bowl, combine corn flake crumbs, mustard, pepper, paprika, garlic powder and lemon rind. Set aside. In another bowl, combine egg white and lemon juice. Dip each chicken breast in egg mixture, then coat with the crumb mixture. Lightly coat a baking pan with cooking spray; place chicken breasts on pan and bake for 25 minutes.
