Twice-Baked Sweet Potatoes

These are to die for!!

2 sweet potatoes
8 oz. can of crushed pineapple, drained
2 tsp. vegetable oil (I used 1 tsp. canola)
1 T. brown sugar
1/2 tsp. salt

Pierce the potatoes several times with a fork. Bake for an hour and 15 minutes at 350 degrees. Remove from oven and allow to cool a bit until you can handle them. Reduce oven temp to 325 degrees.

Cut potatoes in half lengthwise. Scoop the potato out, being very careful not to tear the skin, and place in a large bowl. Add the remaining ingredients to the potato and beat with an electric mixer until well combined. Arrange the skins on a baking sheet. Spoon the potato mixture back into the skins and bake at 325 degrees for 20 minutes.


I think I could eat these every day!!!!

Oh YUM... and hey, if you tear the skins...then just put all the filling into a casserole dish and bake it... would still taste the same... just one more dish to wash. hehehe

I made these this past weekend and they are fabulous. Even my DH, who is definitely NOT a sweet potato fan, loved them. I did make them in a casserole and I cooked the sweet potatoes much earlier in the day. It occurs to me that there is no reason why I couldn't put the whole casserole together well before dinner time - even the day before - then just pop it in the oven at dinner time.

Oh, and I was making Heather's Herb Chicken Breasts, so I baked the sweet potato casserole at 300 for 40 minutes to go with the chicken - 20 minutes covered, 20 minutes uncovered - and it came out great.

I have not tried this yet, but I will soon. I was just wondering what if you applesauce instead of the oil (it would add more flavor) and also you could use a cinnamon honey butter instead of the pineapples! Just a couple suggestions.

I don't know about the cinnamon honey butter, but I used only 1 teaspoon of oil and that's so little I suspect you could just leave it out and never notice.

I found another Twice Baked Sweet Potato recipe in the Recipe Index while I was trying to find this one:

Shirl's Twice Baked Sweet Potatoes

which has some other flavorings you could try and doesn't use any oil. I'm going to try Shirl's soon, but skip the marshmallows. My DH hates marshmallows on sweet potatoes - he always gives me his "you don't put licorice on broccoli, do you?" speech when I suggest it.

...how many servings would this be to remain safe (ie,not over eating) if I had this with a veggie and chicken breast?

Is one 1/2 considered a filling enough amount?
