MeatLoaf Muffins

Hey ya'll.. I was just watching Rachel Ray and got a great idea for turkey meatloaf muffins.

Take about a pound of turkey
chop up onions, green peppers and celery (add as many or as little as you'd like)
worchester sauce.. a few shakes
a squirt of ketchup
1/2cup of bread crumbs
Grill seasoning
1 egg white
1/2 cup bbq sauce
1/4 cup salsa

Mix that all together and put in muffin tins that have been sprayed with pam. I just made these and they are awesome.. and come out like cute little muffins.

Bake 450 18-20 mins
one serving - 2 to 3 "muffins"

This looks wicked--my kind of muffins and ultra flexible. I bought some super lean white turkey breast tenderloin--hormone free, today. Definite potential. I think I'll use shredded zucchini as a filler.

I saw a recipe in the exchange for turkey meatballs that you posted. Instead of the oatmeal bread, I'd just substitute grated zucchini, maybe some grated beets for sweetness? I have these really cute micro-mini muffin cups to help them keep their perfect form.

It's Canadian Thanksgiving weekend and well...I'm not sure if I'm going to bother cooking much this week, to be honest--leftover turkey boob fest, if you catch my drift. However, knowing my brothers...they'll pillage all the good boob meat and leave me with chopped liver and swiss chard or some such thing. Maybe I'll bring a tofurky.

Ok I am making these tonight but am using Shell's meatloaf recipe instead. I can't wait to see how they taste!!!

I am so in love with the ground turkey recipes I have tried, I must try this one as well!
Do you ever have them as leftovers? I like to make recipes that I can take for lunches the next day, and I dunno how well meatloaf keeps... what do you think?

I will certainly try these, and try to remember to post my reviews!
