Homemade Low Calorie Potato Chips

Ingredients:
1 large potato, scrubbed clean and sliced
1/2 teaspoon olive oil
salt or seasonings

Instructions:
Pour oil in a plastic Ziploc baggie, along with whatever seasoning or spice preferred.

Put potato slices in bag.

Blow up the bag and quickly seal it shut.

Shake vigorously until all the slices are coated.

Arrange slices in a circle on a microwave-proof plate.

Microwave on high for 4 minutes.

Turn chips over and re-arrange them so they cook evenly.

Microwave again for 2 minutes.

Turn.

Watch them carefully and microwave again for about 2 minutes or until they start to brown.

They must brown a little in places or they will not crisp up.

Remove and let cool.

The chips crisp when cooling.

I haven't tried this recipe yet - maybe the fat could be reduced by using a spray instead of oil? It would probably work with other root vegetables too, eg parsnips or beetroot.

This sounds so yummy Josephine! I do something similar to this (with both potatoes and sweet potatoes) in the oven - the microwave would be so much easier! I'd like to see if it gets them as crispy. My guess is you'd have to slice them reallly thin - but that would be yummy too, just like real chips/crisps!

Thanks for the recipe!

I just made them with sweet potatoes - think I put too much oil in, but they were good. They shrunk quite a bit, and I think 4 mins is a bit too much for my microwave, 850w? Buuut, will know for next time! Thanks for this - saves me going to Tesco and buying any!!!

Nik, I'm so glad the recipe worked (more or less) I was a bit nervous about posting something I haven't tested first. I've been wondering what kind of potatoes would be best - floury or waxy or the ones marked for microwave cooking? I think maybe floury (like Maris Piper or King Edwards), what do you think?

Laurel, do you have details how to do this in an oven? Like time and temperature? Or has it already been posted? Thanks!

Josephine

Absolutely, it worked a treat - it was my own fault for putting too much oil in!! I'm not too up on my spuds, but I'm going to give Maris Piper ones a go! The sweet pots really crisped up really well, so there's no doubt that the microwave works as well as the oven - and its quicker!! haha I sliced them pretty thin, but even the thicker ones crisped up nicely!!

I'm going to try it with beetroot next, as you can get beetroot crisps and parsnips!! How exciting, never again will I have to buy crisps from the supermarket!! Thanks again...
