PARADISE APPLE CAKE

Here's an apple cake that gets moister the longer it sits.

PARADISE APPLE CAKE

1-1/2 c white sugar
3 c flour
1-1/2 tsp cinnamon
1 tsp baking soda
1-1/2 c applesauce
1 tsp vanilla extract
3 med apples (1 lb)
6 egg whites
1/2 c chopped walnuts, pecans, etc. (optional)

Preheat oven to 350. Coat an angel food pan w/veg cooking spray and set aside.

In lg bowl, sift 1 c sugar w/flour, cinnamon and baking soda and set aside.

In small bowl, mix applesauce and vanilla together and set aside.

Peel, core and thickly slice apples, then cut those slices in half and set aside.

In separate bowl, beat eggwhites with electric mixer until they hold soft peaks when beaters are raised. Slowly add remaining 1/2 c sugar and beat until the whites hold glossy peaks.

With clean beaters, combine the applesauce w/flour mixture, then fold in apples and nuts. Take two large spoonfuls of eggwhite mixture and fold into the batter incorporating lightly. Then fold in remaining eggwhite mixture until thoroughly incorporated (until no white streaks show in the batter).

Pour mixture into prepared angel food pan. Bake for 1 hr or until cake tester inserted in cake comes out clean. Place on rack to cool and then carefully unmold.

It's a great apple cake. You can probably slice the apples thinner if you need to.
