Shane took care of what SHOULD have been leftovers...LOL Guess he liked it! Shell's Shiitake Mushroom Basmati Rice Makes 4 servings Ingredients: 1 tablespoon olive oil 1 cup chopped shiitake mushroom 2 tablespoons minced shallots 1 clove minced garlic 1 (14oz can) vegetable broth 1/2 teaspoon white pepper 3/4 teaspoon salt 1 teaspoon parsley 1 cup basmati rice Directions: Heat olive oil, mushrooms, & shallots in a medium saucepan, oven medium heat 2-3 minutes. Rinse rice 2 times and then add to pan along with the balance of ingredients. Bring to a boil, cover, reduce heat and simmer 20 minutes.
