Favorite new banana bread

2 c Mashed bananas
1 tb Grated orange Rind
1/3 c Orange juice
6 Eggs whites
1 c Packed brown Sugar
1/3 c Vegetable oil
2 1/2 c All-purpose flour
1 c Chocolate chips (omit if you can't eat chocolate)
2 ts Baking powder
1/2 ts Baking soda
1/2 ts Salt
1/2 ts Nutmeg

In bowl, blend bananas, rind and juice. Beat in eggs. Stir in
sugar and oil. Combine flour, chocolate chips, baking powder
and soda, salt and nutmeg; stir into banana mixture just until
blnded. Pour into 4 greased 5-3/4 x 3-1/4-inch loaf pans.

Bake in 350 degree F oven for 45 to 55 minutes or until tester
inserted comes out clean. Let cool in pan on rack for 10 minutes.

Remove from pan and let cool completely on rack.

I make two loaves with this recipe. I put chocolate chips in one for the kids and leave the other plain.

This sounds great, Barbara! If I wanted chocolate chips in both loaves (and I definitely do!) I should just double the amount of chips, then?

No you don't have to double the chocolate chips, but if you can eat them why not add extra chips. The recipe makes two loaves.

No I didn't come up with my own recipe. I found it on line while searching for banana recipes. I love the bread and omit chocolate chips from one loaf. I can't handle chocolate due to GERD.
Like you I like to experinment when I have time. Most of my recipes are from cooking instead of baking. One of my friends nuges me once in awhile to put my recipes together and write a book.
