Sloppy Joes

1 pound lean ground chicken or turkey (skinless)
1/2 cup chopped onions
2 cloves garlic, minced
1/2 cup chopped celery
1/4 cup grated carrot
1 cup cooked brown or white rice
1 cup diced tomato
2/3 cup ketchup
1/2 cup chopped green onions
2 jalapeno peppers, seeded and minced
2 tablespoons of white vinegar
1 tablespoon EACH lite worchestershire sauce and brown sugar
1 1/2 teaspoons chili powder
1 teaspoon EACH ground cumin and prepared mustard
1/2 teaspoon crushed red pepper flakes
1/2 teaspoon black pepper
8 hamburger rolls or soft kaisers.
Spray a large saucepan with non-stick spray. Add ground chicken, onions, garlic, celery and carrot. Cook over medium-high heat until chicken is browned, about 8 minutes. Stif often. Break up any large chunks of chicken with a fork. Drain off any fat.

Stir in remaining ingredients. Reduce heat to medium-low. Cover and simmer for 10 minutes, stirring occasionally. Spoon chicken mixture over bottom half of hamburger or kaiser bun, cover with top half and enjoy!
