Asparagus With Raspberry Vinaigrette

1 Tbsp Olive Oil
1 Tbsp raspberry vinegar
1/2 tsp honey
1 lb fresh asparagus
1-2 cups boiling water, jsut enough to depth of 1" in the bottom of pan with steamer
Ice water for cooling asparagus
Fresh parsley for garnish
Steps:
1. In a small bowl, whisk the oil,vinegar and honey till well blended.
2. Set aside.
3. Snap off tough ends of asparagus and discard them.
4. Place spears in vegetable steamer basket over boiling water in pan.
5. Cover and cook till tender about 6-8 minutes .
6. Drain immediately and plunge into cool water.
7. Chill.
8. Arrange asparagus on 4 plates lined with lettuce leaves.
9. Drizzle with vinaigrette.
10. Garnish with fresh parsley sprigs.

Shirl, where do you find raspberry vinegar?? I had never heard of it until recently, and now this is the third recipe I've seen that calls for it. I looked in a couple of local stores last week and couldn't find it anywhere. I guess I might have to go into the city for it. Any hints about where to look?

Okay, I found "raspberry infused balsamic vinegar". Do you think that would work?

Kree, I do not see why that would not work. I actually found a bottle of RV in a specialty shop in Canada. But I am sure it available, it is just a matter of finding it. But the other should work I dont see why not.
