Blueberry and Lemon Pikelets

These are yummy!

2C flour
4t baking powder
1/4C white sugar
2 egg whites
1 1/2 C low fat soy milk
1 T finely grated lemon rind
1/2C fresh or frozen blueberries

1. Combine dry ingredients then add egg whites, soy milk and lemon zest. Mix to smooth batter and add blueberries.

2. Heat a non-stick pan sprayed lightly with cooking spray over medium heat. Cook tablespoons of mixture for 1-2 minutes per side.

I actually wondered whether Pikelets where only an Aussie thing when I posted and I guess they are then.

In answer to your question Heather, they are kind of like a mini pancake I guess but are often cooked in batches then served cold with Jam. (some people use cream, but I wouldn't do this anymore!)

hi kinoz; sounds great, but as i said in my last holiday post, pancakes are something I just can't seem to handle, as much as I love pancakes, of any size. I just get a lot of gas with an empty stomach.

I made these this morning and used about twice as much lemon zest as the recipe called for. They're very good - like a pancake but not as sweet as most pancakes seems to be.

Joe pointed out that there's probably no reason these couldn't be made as "regular" size pancakes. But they're awfully cute as the little tiny ones.

These are so simple and awesome!! I've had a craving for pancakes for a while and this hit the spot, and the best part, totally IBS safe.
