Zucchini Pie

3 c zucchini, diced
1 onion, diced
1/2 c grated soy cheese
1 c low-fat/fat-free bisquick
1/2 c oil - (can replace half the oil with applesauce to lower the fat content)
1 t salt and pepper

Mix these all tothether in a deep pie dish and bake at 350 for 30 minutes, or until done.

Did anyone else try this? I made it tonight and think I followed the recipe correctly. The pie never really solidified. I cooked it for about 10 min longer than recommended to try to get it to firm up and then let it sit for 10 min before I cut it.

We ended up scooping it into bowls. I tasted good but was really oily. Maybe the 1/2 c. of oil is an error. I'm not sure if it's worth trying with applesauce or not.

I haven't tried it - hadn't even seen it - but it sounded like a yummy idea, so I went hunting around. I found a bunch of similar recipes, including the two here and here (hunt down the page for "Zucchini Pimpossible Pie"). Both of these call for eggs so I'm wondering if that's the problem - I would think the eggs might result in more of a crust or maybe even custard effect. You could try this with egg whites or EggBeaters and see what happens.

It's too early in the morning for me to do math, but it feels like this recipe has an awful lot of fat. There's the oil; the Bisquick has some; and I'm pretty sure the fake cheeses are higher in fat than is safe. I'd be tempted to just eliminate most of the oil and see what happens. If you take a look at my Norwegian Apple Pan Pie recipe, it's the same idea and it doesn't use any extra oil at all.

HTH. If you get this to work out, please do post - it sounds like a great idea.

Thanks for the tips, I think you're right about the egg. I'll probably try this again at some point with egg and less fat, and will update the post when I do. And the Norweigen Apple Pan Pie looks yummy!

I just made the Norwegian Pie the other day. A nice easy quick recipe that is yummy. I will say I only used 1/2 cup sugar and I feel it could even have used less.
