Honey Roasted Red Potatoes

From my amazing SIL who always makes something IBS-safe for me whenever we get together. She made this last weekend and it was a huge hit.

Honey Roasted Red Potatoes

1 pound new red potatoes, quartered
1/2 c. chopped onion
3 tablespoons olive oil
2 tablespoons honey
1 tablespoon mustard seed
1 pinch salt
1 pinch ground black pepper

1. Preheat oven to 375 degrees F (190 degrees C). Lightly coat an 11x7 inch baking dish with nonstick cooking spray or olive oil.
2. In a med. mixingl bowl, combine olive oil, honey, mustard seed, salt and pepper.
3. Add onion to the honey mixture and stir well.
4. Add potatoes to the mixture and toss to coat.
5. Bake in the preheated 375 degrees F (190 degrees C) oven for 35 minutes or until tender, stirring halfway through the cooking time.
