Here's what I'd do:
1 cup orange juice 1/2 cup white wine or beer 1/3 cup brown sugar 2 tbsp. malt vinegar or cider vinegar 1 tbsp. soy sauce 2 tsp. chili powder 1 tsp. minced garlic salt and pepper optional
Put chicken in crockpot, add some fine-chopped celery and cubed peeled sweet potatoes, enough to get the crockpot about 3/4 full. Mix above ingredients and pour over the top. Add more o.j. or wine or beer or water or chicken broth if necessary so the chicken is almost covered with liquid. Cook on high for an hour or so and turn down low till done.

I would go asian. Add some soy sauce, ginger, garlic and broth if needed or sherry or sake is good. Baby carrots should cook the same as the chicken so put some carrots in. Scallions for garnish and maybe sesame seeds when it is done. Something like that.
