My SIL makes these all the time and they are very yummy. You can do as many variations as you can think of. I don't really measure, but here are the ingredients:
ground chicken or turkey
chopped green onions
red bell pepper chopped very small
onion powder
garlic powder
soy parmasean (optional)
salt
pepper
ginger -- either fresh and chopped small, or powder, or "ginger juice" which I just found at the HFS and love.
flour or breadcrumbs as needed so the patties aren't too loose.
That's it really -- make the patties, and if they seem loose, put them in the fridge for an hour to let them firm up. I grill them on the george foreman, but you can do them on a regular grill or under the broiler. I use an english muffin for a bun, but just about anything works. It doesn't really need any condiments, but I like to spread a little ripe avocado on both sides of the bun. Enjoy!

Yeah they are super yummy. Have you ever seen the ginger juice? When I saw it in the store I had to give it a try. It sure beats chopping or grating fresh ginger, and I think it imparts a lot more flavor than the powdered kind. I also like to use it in my tea, as the powdered kind never seems to dissolve enough.
