Slow Cooker Pumpkin-Apple Dessert

I just got this in my email, and it looks/sounds SO good! From the Betty Crocker website, you can find the recipe (and a picture) here. I hope canned apple pie filling is safe; otherwise, homemade is the way to go.

1 can (21 ounces) apple pie filling
2 cups Gold Medal® all-purpose flour
1 1/4 cups packed brown sugar
1 cup canned pumpkin (not pumpkin pie mix)
3/4 cup fat-free cholesterol-free egg product (Egg Beaters)
1/3 cup canola oil
2 teaspoons baking powder
1 teaspoon ground cinnamon
1/2 teaspoon ground nutmeg
1/4 teaspoon baking soda
Ice cream (soy, Rice Dream, etc), if desired


1. Spray 3 1/2- to 6-quart slow cooker with cooking spray. Spoon pie filling into cooker; spread evenly.
2. Beat remaining ingredients except ice cream with electric mixer on low speed 1 minute, scraping bowl constantly. Beat on medium speed 2 minutes, scraping bowl occasionally. Pour batter over pie filling.
3. Cover and cook on High heat setting 1 hour 30 minutes to 2 hours or until toothpick inserted in center comes out clean. Serve with ice cream.

Serves 12.

Note: This recipe was tested in slow cookers with heating elements in the side and bottom of the cooker, not in cookers that stand only on a heated base. For slow cookers with just a heated base, follow the manufacturer's directions for layering ingredients and choosing a temperature.

You totally beat me to the punch. I was gonna post this myself when I got it in my e-mail. GREAT recipe! I sent it to my Sis (Barbie), and I think we're both gonna make it.

Sounds fabulous.

BTW, canned apple pie filling doesn't bother me except that, in a pie, it has no taste at all compared to fresh. However, in this recipe, with the punkin, I'll bet it's great.

If you make it, let us know how it comes out, 'kay?

1. I used to can pie filling for YEARS when I had a couple dozen apple trees in my yard. (aaaagh!) Took me years to figure out how to do it. Peel, core, and slice up apples, add a bit of lemon juice, sugar, cinnamon, cornstarch, etc. just as if you were making a pie, and pack it into quart jars and can it as per directions for canning other fruits (apples, peaches, whatever) and you get canned quart jars of apple pie filling. Piece of cake.

2. Campfire dessert: Back when I used to spend every fall in hunting camp in Oregon, there was this guy who used to show up every year and want to make his special campfire dessert. One box of standard "gingerbread cake mix" and one big can (16 oz?) of applesauce. Mix 'em up, put it into a big coffee can, toast it over the fire. Even I had to admit it was pretty good stuff.

That reminds me of something a friend used to make at our annual mega-campout. He'd take a big cast-iron cooking pot, and mix together canned cherries and cherry pie filling. He'd sprinkle it with yellow cake mix, dot it with margarine, cover it, and cook it over the campfire until really well-browned. That stuff was GOOD.

This sounds MAJORLY YUMMY!

Any idesa whta I can use to sub for the brown sugar...I gotta try this out! (No sugar for me...mayble molasses or something?)

Molasses might work, but I have no idea how much you'd use - I think 1 1/4 cups would be too much, you'd end up with too heavy of a molasses flavor. What sweeteners can you use? Maybe a combination of things would work best...

it's a vegan, whole foods dessert cookbook (no kidding). Amazon.com will have it. I think it's by Fran Costigan. She's got a whole intro section about various natural sweeteners (like rice or barley syrup, or maple sugar) and how to use them, how to sub them in regular recipes, etc. Only downside is those sweeteners are very, very expensive - it's a good incentive to not eat sweets too often, I guess!
