Scalloped Chicken

- Modified ever-so-slightly from a recipe in 500 Delicious Dishes from Leftovers, 1953.

4 cups chicken broth or (soy/rice) milk
1/2 cup flour
1 tsp salt
3 cups diced cooked chicken*
2 cups coarse bread crumbs**
1 cup cooked macaroni
3/4 cup Egg Beaters, scrambled until very firm
"Buttered" crumbs (mix another 1 cup bread crumbs with 2 tbsp melted soy margarine)

Bring 3 cups of the broth/milk to a boil. Whisk together the flour and remaining broth/milk, and stir into boiling liquid. Cook until thickened, stirring constantly. Stir in salt. Add chicken, bread crumbs, and macaroni.

Place alternate layers of chicken mixture and egg in baking dish sprayed with cooking spray. Top with buttered crumbs and bake in 350-degree oven about 1 hour. Serves 8.

* 2 large skinless boneless chicken breast halves should yield about 3 cups chopped chicken.

** By "coarse crumbs", they mean stale bread that's been grated - soft crumbs - NOT commercial dry breadcrumbs that come in a can.
