Plantain Curry Rice

I was actually inspired by this recipe, but I decided to get lazy and start out with boxed rice, and it came out REALLY good! Keep your tolerance for spicy foods in mind - the mix is pretty mild, but my spice tolerance is pretty high.

1 box Goya curry rice w/ carrots & onions
2 ripe plantains
1/2 cup frozen peas
Dash of cinnamon or cardamom

Prepare the rice as directed on the package EXCEPT omit any fat or oil called for.

Meanwhile, peel the plantains. (The site linked above tells you how, if you've never done it.) Cut each in quarters lengthwise, then cut in 1/2" pieces. Add to a microwave-safe bowl with the peas and a few tablespoons of water. Microwave on high until the peas are tender, stirring halfway through, 5-7 minutes.

When the rice is cooked, stir in the plantain-pea mixture, along with any liquid, and the cardamom or cinnamon. Serves 5-6 as a side dish.
