Tortellini Soup

Tortellini Soup
1 medium onion, chopped
1 garlic clove, minced
2 cans (14 1/2 oz each) chicken broth
1 package DeGiorno's Portabella Mushroom stuffed tortellini
1 can (14 1/2 oz) Italian stewed tomatoes
1 package (10 oz) frozen chopped spinach, thawed and drained
In a large saucepan coated with nonstick cooking spray, saute the onion and garlic until tender. Add broth; bring to a boil. Add tortellini; reduce heat. Simmer for 10 minutes or until the tortellini is tender. Stir in the tomatoes and spinach; heat through. Serve immediately. Yield: 7 servings

Made this for the first time tonight... oh, wow! Very good. I also sprinkled a little soy parmesan on top of it. One variation you can do with this, is add 2 1/2 cups of cooked cut up chicken.

It took me until tonight to realize that there is dairy in the pasta that I suggested... of course! This soup is really yummy, so hopefully you're able to substitute something without dairy for the pasta.
