The reason why I want to post on here is basically to keep my motivation up for working out and eating right. I used to be fairly active, but since having mono in March of last year I've really struggled. My IBS got worse, energy went WAY down and stayed that way for a long time. I recently got rid of all my IBS symptoms by changing my diet again. But, I'm still struggling with my energy, sleeping an average of 10 hours a night and still napping in the afternoons sometimes. I'll be getting my thyroid checked next week along with iron and B vitamin levels to see if there's any reason for my fatigue (since I know it's not just tummy troubles causing the problems). If not I guess it's just the mono sticking around, in which case 'sweating it out' is a good option. I tend to do my workouts at home with lots of layers of clothing.
Food for today: Breakfast: quinoa, blueberries, almonds Snack: leftover curry with tofu, carrot, sweet potato, mushroom, peas Lunch: teriyaki chicken with zucchini, carrots, quinoa Snack: applesauce, Spirulina Dinner: more teriyaki chicken Snack: amaranth peanut butter honey mix
Workout: 20 minutes stepper, stretching, back exercises

I made an appointment with an allergist for Wednesday. I'm so excited to be able to breathe through my nose again. I've never looking forward to a doctor appointment like this in my life.
2 eggs + 1/3 egg whites 1 t nutritional yeast 1 pear
10 almonds
stir fry: zucchini mushrooms tofu shiratake noodles teriyaki & black bean sauce
maple cinnamon flax crackers
1/2 c lactaid cottage cheese 1 c sauteed cauliflower 3 T walnuts
Larabar
3 baby dill pickles soy crisps small apple
1475 calories, 88g protein, 43% calories from fat.
That was some evening snacking there, from the pickles through the apple. I'm craving a spoonful of peanut butter right now, but one spoonful always becomes more, and I need to break this habit. Hopefully this is something that can be quit like smoking. Habits must work that way, right? I know it's not healthy. I'm not hungry. It's a habit. It's comfort. I almost hope it's like an addiction, because that means that it'll get easier not to do it. I'm gonna go brush my teeth and go to bed. All this over some peanut butter. What the hell? I honesty feel a little crazy sometimes.

Wow I have to say you're doing great with eating healthy. Keep it up!
BTW you aren't crazy for craving peanut butter. I've actually heard people who are deficient in some B vitamins crave peanut butter. Maybe you can get that checked out with a simple blood test. If not well then I guess you just like peanut butter! I also find brushing my teeth after my last snack helps me not eat too late (I tend to feel bloated if I eat right before bed).

Thanks! I've actually been taking B vitamins lately, because since I'm a vegetarian, I don't get a ton in my diet. The pb craving is, I think, just a snack craving. I'm trying something different today and having some at breakfast, so I don't feel like it's *forbidden* but I still avoid it at night, when I'm prone to eat too much.
Your food looks delicious and healthy, too. I hope you figure out the fatigue thing soon!

Low B12 AND Folate! Hopefully this is the reason for the fatigue. I'm starting supplements now. I have been taking a multimineral but no vitamins, guess I'll be including vitamin supplements from now on.
I had my B12 checked a while ago and it was fine. Don't know why it's changed but I guess it makes sense, I'm not a huge meat-eater.
