Has anyone tried these? They're a Japanese noodle that's made almost entirely of water and soluble fiber (from a kind of yam). They're also available made with tofu. Wondering if anyone has any experience with them. Thanks!

I've never heard of these but I'm definitely going to look for them. I'll let you know when I try some.

I tried them a couple of times. I am not sure I prepared them properly. They tasted okay but the texture seemed a bit odd. Perhaps it is an acquired taste

Well, I bought a bag of the tofu shiratake (all I've seen in supermarkets here), and I think they're great! Granted, my nose is all stuffed from allergies, but they're not supposed to have their own taste anyway - they absorb the flavor of whatever they're cooked in. When people don't like them I think it's the texture, which worked fine for me. I blanched them in boiling water, and then stir-fried them in with zucchini, mushrooms, and tofu in teriyaki/black bean sauce. The texture is sort of like rice noodles, sort of wet and squishy, but that goes great with asian cooking. I wouldn't imagine them being great in place of spaghetti. But I'm very happy with them. 4 oz of noodles has 20 calories, 2g fiber (I'm pretty sure it's all SF), and 2g protein.
