I love Chipotle and Qdoba's cilantro lime rice and it seems like it would be safe, but I recall there being a good amount of fat in it according to dietfacts.com (a great site to find nutritional information for restaurant chains and commercial products). does anyone know where this fat comes from? maybe they put oil in it?

I'm sure it's probably cooked in oil. But, rice is such a good SF base, that it should be safe as long as the oil represents less than 25% of the total calories. If you eat it along with a safe meal, it should be fine. As with all things, don't gorge yourself -- eat it in moderation and you should be fine. The nice thing about IBS is that in general, spices are not a trigger. So, Mexican food is not out!
Incidentally, did you know that refried beans are safe? I can't attest to the beans you might get at a restaurant, but Old El Paso refried beans are very low in fat (I think 1.5 grams) and are also available in fat free (which just seems unnecessary). The way they are all mashed up is a safe way to take in some IF while still having a SF base. Plus, they are yummy. Sometimes I add them to my mashed potatoes for a total caloriefest!

Restaurant dishes almost always have some kind of added oil... and, of course, if you saute some onion or whatever in oil, then add the rice and water and cook it just like that, all that oil stays right in the dish. I don't know if there's anything in it beyond the cilantro and lime, but that's probably the case if there's onions or garlic in it.
And if not, they've probably just added olive oil for texture.
