Need safe lunch ideas

I am trying to incorporate Heather's dietary changes. I have no problem following the guidelines at breakfast (eating oatmeal, Rice Chex with soy milk, or sourdough English muffins.) At dinner I can usually make safe choices. It's lunch I'm having a problem with. The usual things I would eat (a peanut butter and jelly sandwich, pimento cheese sandwich, a hamburger or hot dog, or salad) are not IBS safe. Lately I've been eating a plain turkey sandwich on white bread with baked ruffles. (with benefiber and peppermint tea.) I am so tired of chicken or turkey sandwiches. What else can I fix that would be quick and IBS safe? I need something fast and easy! I like baked potatoes, but if you aren't supposed to put butter, cheese, or sour cream on it, what can you safely eat on it? Today I watched (and smelled) the cheeseburgers and french fries my teenagers had for lunch and felt sorry for myself eating a dry English muffin, applesauce, and baked chips. Not very nutritional. Any safe canned soups or frozen entrees? What kind of lunch do most of you have????

I just got done eating my lunch here at work and I had a Tuna sandwich on french bread. A few Lays potato chips, and I'm nibbling in some red seedless grapes....haven't had grapes for a while so not sure how they will agree with me. I usually have a snack about an hour before lunch of a motzarella string cheese and 4 saltines. Then later in the afternoon sometimes I will have yogurt. I know I'm probably doing some things wrong...but it's hard to change sometimes.

Some ideas:

Morning Star Hot Dogs (soy) are good...make sure the buns don't have high fructose in them...

Buy some soy or rice cheese slices for those boring turkey sandwiches...

Stoneyfield Farms O'Soy yogurt is delicious (buy the 6 pack of strawberry and peach)...

Boca burgers or boca ground beef for tacos (on a flour tortilla with some homemade salsa)

Thai Kitchen Instant noodle soup...you can find them in health food stores...the garlic and veg., spring onion and lemongrass and chilli are safe...

As I've only just discovered Heather's eating plan I'm new to this, but today for lunch I had a large baked potato, cooked chicken on top & added a fat free salad dressing (Honey mustard type). It was really good & very filling. But I'd love to see more ideas (haven't received my books in the mail yet)
PS - I love this site - feels like I've made a bunch of new friends!

Your grocery store might sell sushi rolls (like California rolls) to go. If you have a good health food store they sell safe tv dinners and veggie burritos. Take leftovers of dinner the night before. Try smoked white fish or salmon on a sandwich with fat free mayo, bit of horseradish, or mustard. Bake banana or zucchini or pumpkin bread to take for dessert.

Heres a few of my favorites:

Burritos: no fat shells filled with rice and Fantastic brand taco meat replacement(its made from soy and actually taste like hamburger!) Use a little rice cheedar cheese for a little more flavor. I make them up the night before, wrap in saran wrap and nukem ate work!

Have you tried the rice butter spread? Its pretty good on potatoes and rice. It does have 3 grams of fat per serving I use just a little and seem to tolerate it fine!I also sprinkle with garlic and salt and a little of that butter sprinkle stuff.

I also like the Thai Kitchen noodles, you can but them right in the bowl, just add water and nuke!

I make a lot of cold salads with potatoes and/or noodles, low fat dressing, theres a low fat garlic vinegarette(sp?)I really like, add some chicken and green beans if you can handle them.

having to buy special things just for me and having to go to a health food store to get these things. I just want to be able to pick up things at the "regular" grocery store and fix them. I hate to cook. Can't I just grab something? A can of Campbell's soup? A sandwich? I have 2 teenage boys that are always starving and although I know I will have to modify my diet, I don't want to have to prepare 2 different meals----and buy 2 of everything (such as cheese, milk, etc.) I am really fighting this! I don't want to feel handicapped, like a special needs person. It embarrasses my boys to death when we eat out and I make such specific requests. (Of course, everything I do embarrasses them.) And in several weeks, we will be staying with my parents and my mother is a big cook, lots of rich, greasy foods. That's just the way my mom is----cooking for us is the way she shows her love. Our week will center around what we will eat! I can't expect her to buy and cook different things just for me. No one in my family is going to eat tofu or soy anything, especially not my boys or my dad.

I know exactly how you feel. I, too, don't want to have to go to the health food store for everything I need to eat. It's just my husband and I usually for dinner and I don't want to make two meals....so I tend to fix what ever he will eat and I go ahead and eat it just in small portions and pay for it later if at all. I don't want to by soy everything. I just want to be able to go to the grocery store or Walmart supercenter and get what I need. Is it possible?

I understand its difficult to change, especially with kids but if "regular" food makes you feel bad....I am visiting my inlaws over the 4th of july holiday-for 5 days! I am nervous because, like your family they like to eat(and eat and eat very fatty and greasy foods) and its typically a big event. I have decided I am going to make up "safe" meals and put them in tupperware to take with me. I am afraid of offending them but I will just explain to them that I can no longer eat the way I used to because it was making me sick. It may cause a little tension but its more important that I feel and stay well. When it comes time to eat I plan on sticking my tupperware in the microwave and sitting down to dinner with eveyone else likes its no big deal. It is frustrating and embarrassing but what can we do about it? I refuse to eat things I know will make me sick no matter how mad or offended they will be. I'm hoping if I don't make a big deal about it they won't either. Luckily my husband argrees with me and it was actually his idea about making my meals in advance, that way his family doesn't have to worry about what they can/can't feed me! It is a pain in the butt to go to more than 1 grocery store but if thats what it takes to get me feeling better, I am willing to do it. Good luck, I'm sure you will find what works best for you and your family.

I like to have a pack of tuna for lunch or a baked potato but i use the fake butter spray. It doesn't bother me at all, i would give it a try.

You say you make your husband dinner, eat what he eats and pay for it later. Why should you do that to yourself? I either make separate meals for my husband and I (nothing elaborate at all mind you, very simple throw together meals). Or I make what I want and if he doesn't want it he is free to make and eat whatever he wants. My health and my body is more important than making things convienient for either myself or other people. I say treat yourself to safe foods that are good for YOU, even if it means taking the extra half hour to pick up a couple of items at the health food store. There are tons of items in Heather's books that are safe and can be purchased at a regular supermarket. It takes some time to get used to the idea of changing your diet around, but if I can do it, anybody can

I love grain-based salads for lunch. Usually the people around me are jealous because my lunch looks so much better than their greasy stuff. In Cooking Light magazine (I think it was the June issue) there were several recipes for grain-based dishes easily adaptable for IBS people.

Bean-based things are good too. I'll make up a batch of home-made hummus on the weekend, or a cold pasta salad, and then take it in Tupperware for lunch during the week.

Pair with a safe bread or rice cakes.

I know it's hard to be the odd one at meals, especially if you're not really into cooking in the first place. I wish you the best of luck & hope the ideas help.

I've been able to find soy cheese and milk in my regular grocery store, as well as a lot of meat alternatives. I tried to make two different meals at the beginning, but then actually my husband suggested that my diet was probably a lot healthier for him also. I know you have teenagers who can sometimes be picky, but I make a lot of stuff with soy cheese and milk and don't tell people. I've found most people can't tell the difference. What frustrates me now is that these products usually don't go on sale, and are always more expensive!

Hi there!

Have you tried rice noodles? They're EXCELLENT! I am not eating pasta as I have at least temporarily eliminated gluten from my diet...so I'm eating rice pasta. It's great!

I agree with the other folks on the board. Take care of yourself! A mother is the center of the family...and your fam needs you in peak health!

I'm just starting out on this diet thing, so my lunches have consisted of one or a combination of the following:

*Two cups of Kix cereal
*10 Saltine crackers with a three ounce can of tuna packed in water
*Three ounces of tuna on French bread, with squeezed lemon on top
*Reheated veggies and rice from dinner last night
*Dried bananas (Heather's recipe)
*Reheated grilled chicken breast strips from dinner last night
*Baked Lays

Creative, eh? Lunch is the worst because I can't cook anything. I've bought a lunch box and pack it full of a combination of the above items for when I actually get hungry. I drink a protein shake mixed with soy milk for breakfast, and usually have a more substantial dinner.

morning; I enjoy a tuna fish sandwich on french bread for lunch, also the crabcake sandwiches on sourdough is delicious. Both of these recipes are in the book. try them they don't take too much prep. You could prepare the mixes ahead of time.

hi all,
I have been putting heathers diet into practice for a good two months now and i must say i am feeling alot better than i did. i used to struggle for lunches too and sometimes still do - i am a single mother of one andi childmind for my friends little girl so i dont have a lot of money to be cooking seperate meals i have swapped to diary free butter and milk and icecream - the kids would never eat all there sanwhiches because the butter was too sickly now i have swaped to diary free they finish the lot! heathers Tomato, onion and bread salad(in book) is lovely along with the asparagus and lemon pasta there is lots of thing to make u befoer hand to save on time too! the girls love going for a picnic because i do lots of little hand eaten food that i can eat and they love to dip there bread and crisps in my homous lol. It is difficult to start with changing the way you eat but believe me i have been on the diet and then lapsed one night whilst feeling in need of my old food and you realy do pay afterwards makes you realise just how well this diet works. chin up and keep going you will find a way that works for you!

Yes! I just realized it's a lot scarier to alter a recipe for other people. There's a lot more responsibility! For example, one of my rice salad recipes calls for hard-boiled eggs. I know I can eat at least a small amount of that, so I usually leave it in. Can't do that for the general board, though! There are a lot of bowels to protect out there!

So I'm working on a couple and will put them on the Recipe Board when I deem them satisfactory.

Make a sandwich with a small amount of low-fat peanut butter and seedless jam or jelly (I like Vavel's fruit butters and preserves). Try a Boca burger with ketchup, mustard, and pickles, and lettuce and tomato if you can tolerate them. Chicken hot dogs are good--heck, they're better than the "normal" hot dogs from the stand at the mall . Someone had a good suggestion of adding a slice of soy cheese (SoyaKaas is great) to your turkey or chicken sandwich for extra flavor. I like at least one of the Healthy Choice vegie soups, but you'll have to try a couple--some don't taste very good, and I don't know how well you tolerate beans. All of the above items--low-fat pb, seedless jam, vegie burgers, chicken hot dogs, Healthy Choice soups, even soy cheese--can be found at larger grocery stores, such as Kroger and Wal-Mart. And check out the index at the recipe board--there are tons of good ideas there if you're willing to cook a little.
