Baked Macaroni and Soy Cheese

After adapting several mac and cheese recipes to fit my tastes and dietary needs, I finally combined them and came up with a baked mac and cheese recipe I absolutely love! Even my cheese-eating parents were impressed with it. So without further ado...

Kree's Baked Macaroni and Soy Cheese
(Makes 4-6 servings)

2 cups uncooked elbow macaroni
2 cups cheddar soy cheese (I use Galaxy Foods Veggie Shreds)
1/4 cup Egg Beaters or 2 egg whites
1 1/2 cups soy milk
salt and pepper to taste
1 Tbsp (soy) margarine (you can also omit this, but I like to add it!)
breadcrumbs
soy parmesan cheese

1. Preheat oven to 350 degrees.
2. Cook macaroni according to package directions until al dente.
3. Drain macaroni and pour into baking dish.
4. Add soy cheese, Egg Beaters, soy milk, salt and pepper; mix thoroughly.
5. Dot with margarine and sprinkle with breadcrumbs and/or soy parmesan.
6. Bake for 30-40 minutes or until it is well melted and the top is slightly browned.

Kree! Thanks so much for this recipe! I was dying to make it, but afraid to be disappointed at the same time. I actually liked it! Even my fiance (who's been doing atkins again - we won't even go there ) had some and went back for seconds. He's a BIGTIME mac & cheese freak, so that must mean something.

The only problem I had was it needed more of a sharp bite to it. I love(d) extra sharp cheddar. I sprinkled some extra soy parm on my serving, and that gave it more of it. For the heck of it, I added a few drops of hot sauce too (and this is not typical of me BTW), and it was REALLY good. I actually craved it today, and couldn't wait to come home for lunch for leftovers!

Yay! I'm so glad you and your fiance both liked it! As soon as my cheese-loving parents told me they wanted me to make it again soon I knew it had to be good, lol. I know what you mean about the sharp cheddar, though... as much as I like soy cheese it just isn't the same! Good thinking with the hot sauce! I added garlic powder to my bowl once and that added a little zip too. Hmm... now that you mention it I need to make this again very soon. There's just something about carbs!! I don't know how your fiance can live on Atkins!

Well, when he is following Atkins, at least my breads and muffins (etc.) are protected! LOL Just kidding!

Thankfully, he is not too hard-core Atkins. He still eats veggies and carbs (just not in first 2 weeks or so for the carbs), but he'll have them early in the day. (except for Kree's BM&C night! LOL) So, I feel better he's not totally killing himself.

I like the way you think, Mags! There's nothing wrong with coveting our precious IBS safe foods. Lol.

I'm glad to hear that your fiance isn't going all out on the Atkins thing. I guess people lose a lot of weight on it, but it just seems so unhealthy! We all need our veggies! Isn't it also annoying to know that all these people who are able to eat raw broccoli, fruits, etc. aren't, by choice??? It's just not fair!

Thank you so much for the recipe. I can't wait to try it. Mac & Cheese is one of my absolute favorites (and what I miss terribly).

One question--it's Egg Beaters Egg whites, right?
