Hi, Double J.

I haven't tried quinoa but it is on Heather's list of Soluble Fiber foods. I thought I remembered that it is a good protein source and I found this old post that says the same thing. This post also talks about how combining rice and beans makes a complete protein. I remember one of my vegan friends telling me this years ago - something to do with amino acids, maybe?

If you do try quinoa, please post and say how it is and how you prepared it. I have a recipe for Red Lentils and Chili with Quinoa that I've never tried. I'll be glad to post it if anyone is interested.

It's okay. Kind of couscous like and very healthy. Some people hate gritty textures like that. I didn't like it for breakfast personally. I recommend always cooking the healthy but not so tasty foods in vegetable stock. Or there is a recipe in Vegetarian Times to cook it with beet or carrot juice to make it a pretty color. Interestingly beets, spinach, and quinoa are all in the same plant family.

A friend made this recipe where we work. He has over the years become careful of what kinds of foods that he offers me.

He sent this email to me so that I could post his recipe ...

"doublej, I just made a kind of stir fry, very simple.

Cook Quinoa as directions indicate, I didn't use chicken or vegetable broth but I'm sure it would be better (in place of water). Also at this altitude (6600 ft.) it took a little less liquid (2 tablespoons or so) and more time.

In large skillet with 1 tablespoon olive oil sauté

1 medium diced shallot
2 cloves diced garlic (or to taste)
1 small diced carrot

After the shallot is translucent add to above mixture

1/3 lb. raw shelled small shrimp patted dry (cut up if large)

When shrimp are just done (light pink) add the cooked Quinoa and stir to heat through, I also added some thawed and drained frozen green peas at this point. This will make a good side dish.

There are almost endless possibilities with the variations.
My only advice is to get the pre-washed Quinoa as I hear
It is quite a chore to rinse off the bitter outer husk."

It was really good. Next time I will eat more!!

This sounds really good to me...

Actually it could also be considered vegetarian for those who only avoid warm-blooded animal products, though do eat cold blooded animals (fish) from the sea. I happen to be one of those who still eats fish that is safe, and of course absent a high mercury content.

Vegetarianism encompasses many types of eating, and one would need to study the differences to know the various types of Veggie eating. It is not at all boring and in fact is more flavorful than general American cuisine.

Interesting. He's using quinoa where I would use rice. Maybe I'll get up my courage someday and try it.
