This recipe came in a booklet from my health insurance. I am planning to make these right away!
3 ripe bananas
1/3c melted margarine
2c quick oats from canister
1/4c soy milk
1/2c raisins
1t vanilla
350 degrees. Mix ingredients and let sit 5 minutes. Spray cookie sheet or use silpat and place drops of dough 1T each on sheet. Bake 15-20 minutes and cool.
Makes 30 cookies.

Minnie,
This sounds so good. I think I will try this also but I'm going to cut out the raisins. Maybe I'll add chocolate chips.

These cookies are pretty sweet but also pretty gummy from the bananas. Still they are healthier than eating a bowl of instant oats since they have no sugar at all. They do not spread! so make sure to press them to the shape you want with a spoon or fork. Mine came out like little haystacks. I think these would be great for toddlers and little kids.
