I don't know what's in your mom's goulash, so I can't say for sure what's making you sick, or how to make it safe. The basics of a safe recipe are pretty easy - it's the same as the basics of the diet - but it's a bit to remember at first.

1. No red meat! And no pork! Fatty fish, like salmon, is something else to watch out for if you're very sensitive to fats.

2. No dairy - milk, cheese, butter, yogurt, sour cream, etc.

3. No more than 25% of the total calories from fat. I can't be bothered to sit down and calculate things like that, so I make sure that there's no more than 1 tbsp of oil in a typical dinner recipe that would serve 4-6 people. Whenever possible, I cook with no oil at all, instead using nonstick cooking spray (Pam) and a good nonstick pan, or I just grill my food.

4. Along with the idea of cutting out fat, most people omit egg yolks from their cooking, using just egg whites or Egg Beaters instead.

5. Don't forget the soluble fiber! A recipe can be perfectly healthy and IBS-friendly, but if it's a lot of vegetables, it could still cause you a problem if you don't eat enough SF food with it. Bread, rice, noodles, and potatoes will all do the trick - but remember the other rules, and skip the butter!

Hope that helps!

The meat isn't. No red meat... that's probably what's making you sick.

I love goulash and I have a very simple recipe that I use...

1lb of ground turkey
1 can of stewed tomatoes and 1 can of crushed
1 package of macaroni noodles
2 garlic cloves
pepper
oregano (maybe 2 teaspoons)

1. Brown the turkey
2. add it to the pot of tomatoes and seasonings
3. boil your noodles and then add them
I usually let is simmer for an hour. I also adjust the seasoing to what I like and what I can tolerate.
Some people have a hard time with tomatoes so that could maybe be a problem for you. But this recipe is simple and quick and good. Hope it works for ya!
