biscuits and gravy

I was in the mood for real comfort food. Makes 2 small servings.
1 1/2 turkey sausages, crumbled. I had the hot kind and it was way better than expected! I recommend the hot kind
a few sliced scallions
1T. margarine
3T. flour
salt and pepper and a little veggie stock base/bouillion if possible
1c. warmed plain soy milk
can of biscuits, baked. The Pillsbury kind has a teeny amount of dairy IIRC. Find a dairy free kind if you are sensitive.

Brown the sausage in a small saute pan. Add scallions just before it is done. Remove, drain and wipe pan. Set sausage aside. Add margarine to pan and melt then add flour and stir a couple minutes. Add a little milk and stir to a paste then add the rest gradually while stirring with a whisk. Season and whisk until it is thickened. Add the sausage back in. Cut biscuits in half and pour on sauce. I served this with creamed corn.

I can't wait to try these. I love biscuits and sausage gravy and figured they were just gone with the wind once I started this diet. Thank you so much!

What brand name turkey sausage did you use? That's a whole new area of food for me.

It comes in a package with 5 sausages. You can get hot or sweet. I wanted sweet but when I defrosted it it was hot. However that tasted better! White sauce is never very tasty you know but this was good. I was going to have the leftovers for lunch but DH got to them first. He said it was good.
P.S. turkey sausage is made with some dark meat. But most here say they are fine with that. Only the expensive ground turkey breast doesn't have dark meat in it.
This recipe is awesome! I use long grain white rice in it and hot or sweet sausage. One of DH's favs!

That sounds really yummy. In addition to being made with dark meat, though, some turkey sausage is packed in pork lining. (I'm not familiar with the brand you mentioned -- I'm just speaking in general.) Since you are crumbling it anyway it's easy enough to just take the skin off, which is what I do in recipes like this. But, just wanted to give people the heads-up to check the ingredients for this.

Thanks for the sausage info. I'll check around and see if I can find that brand. If not, I know Whole Foods has some, including store-made.

And thanks for the heads-up on the dark meat. After I read your post about squeezing the insides out of the sausages, I resurrected a dim, dark memory of doing that with turkey sausage sometime last year (Bevrs' Crockpot Spaghetti Sauce, I think). So I guess I have had turkey sausage before and tolerated it.

The recipe you referenced does sound awesome. Once I get your Sausage and Biscuits made (guess what I'm signing up to cook this week), I'll give that a try.

As for the issue of hot or sweet sausage, years ago I did consulting at a place where everyone went to a local deli for lunch. All their sandwiches were made with peppers and the only choice you got from the counterman who'd been there for a hundred years was, "Hot or sweet, babe?"
