Spicy Baked Zucchini Sticks

Have not tried this - but looks good (and easy). You may want to limit the amount of pepper if you think it is too much.

3 large zucchini
1 egg white, beaten
1/3 cup baking powder
1 tablespoon garlic powder
1 teaspoon salt
1 teaspoon black pepper
1/2 teaspoon cayenne pepper
Pam cooking spray

1. Preheat the over to 450 degrees Farenheit.
2. Cut each zucchini in half and slice into 4-inch long sticks.
3. Beat the egg white.
4. Toss the zucchini sticks in the egg white.
5. In a plastic zip-lock bag, mix the baking powder and spices.
6. Add the zucchini and toss until all of the stick are well-coated.
7. Place a wire rack over a baking pan and spray with Pam.
8. Place the zucchini sticks on the rack and place in the oven for 20-25 minutes or until light golden and cooked.
9. If you like dipping, let the sticks cool for 3 minutes and dip in ketchup, blue cheese, or any other condiment you like. (you would need to substitute this... - check the sauce list on the recipe index) Anne

I've done variations of this one! It really rocks. It has great reviews from my place. It's a great snack, too.

I tend to go for more herbal seasonings, personally. It may sound gross, but cinnamon is actually good on this...ditto for curry types of seasonings.

I don't use that amount of baking powder, though. I might use a few bread crumbs, though or a little plain flour.

Sometimes, this is all I really want for dinner...a plate of appetizers!

Thanks Kate...... I can see how cinnamon would work on this...and I JUST noticed the about of baking powder...yeah, flour would work.
