This is a simple recipe...

4 egg whites
1 cup white sugar
1 tablespoon vanilla sugar
(optional- add chopped nuts or cocoa powder by folding them in at the end)

This can easily be adjusted- its basic forumal is 1/4 cup sugar to 1 egg white.

preheat oven to 250 degrees (yes you read that right- 250!)

Mix egg white, sugar and vanilla sugar in mixer. Whip until stiff peaks form. If adding nuts/chocolate, fold in carefully now.

spoon or pipe onto foil covered cookie sheets.. (kiss forms/shapes, but anything at all works- I've done names, etc..) even used a lined springform to make a large shell to fill with pudding to serve like a cake).

Bake for 1 hour, then turn off oven and leave cookie sheet in until oven if cooled completely (or overnight). Store in an airtight container.

First time I saw this recipe, it included green food coloring, mint flavoring, and chocolate chips. Very dangerous recipe. Normal humans with self-control can eat a dozen of these easy.

I started making it with almond extract instead of mint, skip the food coloring and chocolate chips. Then I tried almond and vanilla extract and added a little shredded coconut. Also tried white chocolate. None of those are bad either. Plain white with almond extract is my favorite.

the vanilla sugar replaces vanilla extract (makes them kosher for passover) but I find I actually prefer them that way to the vanilla extract, but almond or mint extract would be yummy in them too!

I've actually piped them into shapes and placed them on cakes as decor in a variety of colors over time... they are truly wonderful and easy to modify... and unless you can't have egg whites, safe for IBS'ers
