Rice Milk instead of Soy Milk

Hi,

My dietician has suggested that I stop drinking soy milk and try rice milk instead. I can't tolerate any dairy products and she was concerned that the soy milk is also causing problems so that's why she suggested rice milk. My question is whether or not Heather's recipes are safe with rice milk in them instead of soy milk? What about clabbered soy milk - can you make clabbered rice milk the same way?

Hi Lorna - Soy and rice milk are usually interchangeable in all recipes. Rice milk won't quite clabber the way soy milk will, in that it won't thicken up, but the end result of the recipe will turn out just as well. Rice milk tends to be less creamy than soy, so you may notice a slight difference in things like chowders and puddings, but honestly not much. And the recipes certainly won't fail.

I can't do soy either....sensitivity to it. Besides I wouldn't even if I could tolerate it. Have used only Rice beverage (milk) or Almond beverage in Heather's recipes that call for soy, even the ones you add vinegar to. They came out fine. Love the maple/oatmeal loaf and use Rice beverage in that as well as applesauce to replace the fat. I DO add some Xantium gum to help the rising process, about 1/2 teaspoon per loaf. Hope this helps.

I'm new to this board and the recipes in the books so havn't tried them all, but the ones I do I make changes to since I'm so sensitive to all fats. Email me if you want more info on soy, pleioneofthestars@yahoo.com
