Are Mushrooms safe?

I've had a lot of family ask me lately if I can eat mushrooms or not, and honestly I don't know... I generallly just tell them that I can eat bananas and applesauce. Are there any other safe fruits or veggies that I'm missing?

Yes, mushrooms are safe. Saute' sliced mushrooms with a little extra virgin olive oil and tiny bit of garlic, small amount of salt and some chopped parsley in a non stick pan (you can just crush garlic clove and then remove, enough to give some flavor). Baked or mashed potatoes with a little extra virgin olive oil and salt.
Same with chopped (frozen) spinach, cook well and add olive oil and salt to taste.

Hi Beth - Mushrooms are generally safe, especially cooked and combined with soluble fiber. Other fruits and veggies vary, depending on whether they're higher in soluble or insoluble fiber, and whether they're acidic or contain sulfur. There's detailed info here web page
