mrae- Hi haven't seen you for awhile! Hope you are doin OK.
For me, I don't use the faux meat products. I have on occasion had a veggie burger at cookouts or get-togethers, but I don't make it a habit. I, like you, don't like the looks of the ingredients list. But, if you are trying to transition to a meatless diet, you could start with those sparingly to get you over the hump, so to speak. It is my feeling, that if you are choosing not to eat animals, then why eat something that is supposed to replicate that animal.
Doesn't make much sense to me.

As far as recipes, there are sooo many websites and great vegetarian authors out there. You just have to do a little searching.

I don't know your reasons for trying to go meatless, but I applaud you for moving in that direction. Even a few meatless meals a week will help.

You say you can't handle many veggies. Can you handle them well-cooked? Can you handle them in soups/stews, where they are well-cooked, or sauted in a stir fry, or blended/pureed into soups (hot or cold), dips/sauces, smoothies or juiced? There are many ways to incorporate veggies into your diet, without having to eat them raw, if that poses a problem for you.

I can give you my dinner last night. I cooked up some fettucini. I sauted zucchini, onions, garlic, and green peppers in another skillet. Before draining the pasta, I added some of the pasta water to the skillet with the veggies. You could add some vegan cheese to the skillet, or some Earth Balance and you get a sauce. Then you add the pasta to the skillet. Then serve. It was delicious and filling. And I will tell you the veggies were very well-cooked, although I can eat veggies any way I choose.

There are so many options out there, and so much information, but the best thing to do is to "lean" into it. Don't try to make so many changes at once, that you overwhelm yourself. When I became meatless, I did not do it overnight. I gave up one animal at a time. But, it was worth it for my conscience, the environment, the beautiful creatures, and my overall health.

One of my other go-to meals is tofu spaghetti. I really don't do alot of soy, because I just don't know how healthy it really is, so I limit that in my diet. It is very simple to make. I used to add onions to it, but it seemed to overpower the dish, so I just cook some angel-hair spaghetti. In another pot I put some Bertolli's marinara sauce (or make your own) and cube up some firm tofu. Then just combine the two. Tofu absorbs the flavor of whatever you cook it with, and when you use the firm, it really does replace the meat.
