1 tbsp olive oil 12 tempeh bacon strips 8 slices sourdough bread or french baguette 2 tbsp fat free margarine or IBS safe one 8 tbsp vegan or fat free mayonnaise 2 tbsp dijon mustard 8 slices soy cheddar 2 plum tomatoes sliced 8 leaves of romaine lettuce
Heat the oil over med-high. When the oil is shimmering, add the bacon and cook till brown, 2-3 minutes per side. Remove from the pan and drain on paper towel. Spread both sides of bread with margarine and using a clean pan, toast 4-6 mintues each side. Mix the mayo and the mustard together.Spread on one side of the bread using 1 tbsp of mixture. Top with one slice of cheese,bacon,tomato,and lettuce;cover with the remaining bread. Cut in half on a diagonal and serve warm. makes 4
