8 large mushrooms 4 yellow squash 4 zucchini 2 red peppers 2 yellow peppers 1 med red onion 1/2 cup olive oil 1/4 cup lite soy sauce 1/4 cup lemon juice 2 garlic cloves pressed 1/4 tsp pepper salt to taste
Remove mushrooms stems, and discard; cut mushrooms in half. Diagonally slice squash and zucchini; cut peppers and onion into 1" strips. Place veggies in a zip lock bag. Whisk together the oil and next 5 ingredients till well blended. Pour over veggies. Chill at least 30 minutes, remove veggies from marinade and reserve marinade. Grill veggies in grill wok or metal basket with lid down, on med-high heat. for 10min and stir occassionally. baste with reserved marinade.
