1 lb boneless, skinless chicken breasts 1 (2 1/2 oz jar) sliced mushrooms, drained 1/2 cup fat free Italian dressing 1/4 cup chopped onion 2 tbsp IBS safe margarine 1 med zucchine sliced, 2 cups 1 lg tomato, cut in wedges 6 slices soy chedder
In shallow dish, place the chicken with the mushrooms. Cover with dressing. Marinate 30 minutes. Drain and reserve marinade. In large skillet, cook onion in margarine till tender. Add chicken and mushrooms. Cook, covered over medium heat until chicken is tender. Add zucchini, tomatoes and marinade. Cook and stir till zucchini is tender. Remove from heat. Sprinkle with cheese pieces. Cover and let stand 2 minutes till melted. 4 servings
note: I use Italian dressing (FF) all the time when I cook breasts on the stove in pan, they turn out excellant.
