Hakka ginger chicken

Hi I haven't been to this board yet but I think this recipe should be good. I adapted it from a Gourmet magazine recipe. It has loads of ginger so it's good for the tummy. It called for thighs with skin. I once substituted thighs without skin but I think breasts with bones and no skin should be just fine. Or mix thighs and breasts and let the rest of the family eat the thighs.
1c julienned ginger (yes 1 cup)
3# chicken pieces
3/4c. water
2T. fish sauce
1T. canola oil (or less)
In a large stockpot or dutch oven heat the oil and fry the ginger until golden brown. Remove with slotted spoon and drain on paper towels. Add the chicken and brown and both sides. Add the water, fish sauce and ginger and put a cover on and simmer for 40-60 minutes. I put the chicken and ginger on rice and then pour some of the liquid on.
